Brouwerij Boon pays homage to the origins of lambic with Oude Geuze Rémy Le Mercier, a limited edition creation inspired by a historic 1559 ordinance considered among the first accounts of the lambic recipe. The ordinance prescribed precise proportions of cereals, in particular barley, wheat and oats, in local beer production. Boon reinterpreted it by selecting a recipe with 10% oats, to demonstrate that this ingredient, although ancient, can remain relevant: it lends softness and fullness to the body, reinforces the foam and adds a delicate nutty character.
